Mmm...Monday! Apple Thyme Chicken

I like to have a handful of recipes that cater to people with diets different than mine--friends/family who might be vegan, diabetic, or have various food allergies--so that I'm not scrambling to find ideas last minute if we ever get together.  This is a great recipe, found and modified from a diabetic living website, that Paul and I make often when we want to feel fancy without spending a lot of money.  :)

When we have money to buy fresh fruit, we almost always buy apples--they're cheap and everyone likes them.  :)  But then we only eat a few before we get sick of them, and I have to find creative ways to use up the rest.  Enter this recipe!  This dish is EASY, fast, healthy, delicious, and relatively cheap.  What more could you want?

So, without further ado...

APPLE THYME CHICKEN

Ingredients:
2-3 boneless skinless chicken breasts, halved and all the fat cut off.
1 onion, finely chopped (the original recipe calls for 1 c. shallots, if you prefer...but we never have those around and we ALWAYS have an onion in the house, so...)
1-2 apples of your choice, sliced rather thinly
1/4 c. balsamic vinegar
1-2 tsp. dried thyme (or 1-2 Tbsp. fresh)

Directions:
1. Preheat oven to 375 degrees.
2. Spray baking dish (I usually use an 8" square pan) lightly with cooking spray.
3. Place a thin layer of apple slices on the bottom, then arrange chicken pieces over it and remaining apple slices on top of/around the chicken.
4. Sprinkle onions and thyme over entire dish.  Pour on the vinegar over the whole thing.
5. Bake, uncovered, for 15-20 minutes or until cooked through.  Serve immediately.  (We like it with rice, but it's good with buttered/herbed pasta, too.)

Enjoy!
