Mmm...Monday! Peanut Butter Cookies

I love me some peanut butter--I eat it by the spoon--but I struggle to find a pb cookie that is as good as the ones restaurants and hotels often have.  I like them moist and chewy on the inside with a little bit of crispiness on the outside.  And BIG.  These cookies are still a little flatter than I'd like them to be, but they taste AMAZING and it's worth a mild aesthetic sacrifice for the yumminess factor of these cookies!  Caida and I whipped up a batch today after school (as per our weekly tradition of making different kinds of cookies each week if she's good in church), and the recipe seriously makes like 4-5 dozen HUGE cookies!   

Peanut Butter Cookie HEAVEN

1. Preheat oven to 350 F.
2. Cream together 1 c. butter (or 1/2 c. butter 1/2. shortening), 1 1/4 c. peanut butter, 1 c. granulated sugar, and 1 cup packed brown sugar.
3. Add in 2 eggs and a tsp. vanilla and beat well.
4. Stir in 2 3/4 c. flour, 1 tsp. baking powder, 1 1/2 tsp. baking soda, and 1/2 tsp. salt.
5. Refrigerate at least an hour.
6. Roll dough into 1-inch balls and roll in granulated sugar.  Place on parchment paper-covered cookie sheet (a must for nearly ALL my cookies these days!).  Press down lightly with a fork in a criss-crossed pattern.
7. Bake cookies at 350 for 8-10 minutes, or until tops are lightly browned.  Remove from oven, let cool on cookie sheet before removing.

Enjoy...with a large glass of MILK!  :)
