I have only made this gooey, yummy cake 2-3 times in my whole life, but I do like it quite a bit. The cake is almost more like a crumbly, moist, cakey brownie, and the hot fudge pudding that magically bakes underneath is YUM. Also, the whole thing is even better with a giant heap of vanilla ice cream on top--but, then again, isn't everything? :) I've been craving CHOCOLATE all week, and I finally broke down and baked this today since I've pretty much all but given up on trying to lose weight right now. Anywho, best of all, this is an egg-free and nut-free dessert, which means both Paul and Emilie can eat it. It's hard to find GOOD desserts like that!
Ingredients:
1 1/4 c. sugar, divided (see recipe)
1 c. flour
7 Tbsp cocoa, divided
2 tsp. baking powder
1/4 tsp. salt
1/2 c. milk
1/3 c. butter, melted
1 1/2 tsp. vanilla extract
1/2 c. brown sugar
1 1/4 c. hot water
1. Preheat oven to 350 degrees.
2. Stir 3/4 c. sugar, flour, 3 Tbsp. cocoa, baking powder, and salt. Stir in milk, butter, and vanilla, beating 'til smooth.
3. Pour into an ungreased 9" square pan.
4. Stir together remaining 1/2 c. sugar, 4 Tbsp cocoa, and brown sugar; sprinkle mixture evenly over batter. (It will seem like a LOT of powder, but that's the pudding mix!)
5. Pour the hot water over the top (it should pretty much cover the powder). DO NOT STIR.
6. Bake 35-40 minutes or until center is almost set. Let stand 15 min. Spoon into dessert dishes, spooning sauce from bottom of pan over top. Garnish with whipped topping, ice cream, and/or chocolate shavings.

1 can coke (or any can of soda, you could use sprite etc.)
1 Chocolate cake mix
Combine the two ingredients and that is it!! Bake @ 350 for 25-30 minutes or until done. You will never guess that is the only two ingredients. Very low fat but really good taste!!:)
